Both the octopus and the squid (cephalopods) are used in sushi. The octopus is poched since it is too bland when it is raw. The squid on the otherhand has a sweet flavor when it is raw. The arms of the squid are poached so it gives it is easier to consume. Imitaion crab is a variety of cooked ground white fish with imitation crab juices added. They are used for fusion type sushi rolls.
