Cockle, or torigai is a very chewy shellfish that has sweet aromas with a hint of bitterness. They are shucked, and everything but the legs used for sushi. They are butterflied and quickly poached in hot water. The temperature of the simmering water is very important to keep the patterns on the cockle to make them resemble an orchid petal.
